The only example I can cite is that of a Nigerian company called (if memory serves) "Tropway" which marketed more than one variety of fufu mix. These were actually a powder and not flakes. One at least was yam-based. To prepare, you add the mix to boiling water and have to stir vigorously as soon as you did. The result was quite okay in texture (no lumps, about the right feel) and taste. Maybe some more expert in the matter can give a better review. I imagine that the primary market for this particular product is middle class urban in Nigeria. I've never noticed it for sale in Bamako or Niamey, but wouldn't expect to see it up here. Several years ago my wife and I occasionally purchased this mix at an Asian food market in East Lansing. I've since - from over in West Africa again - become curious to know more about the network(s) of distributors in the US that picked up & resold Nigerian and other African foods to specialty markets.
