We have Open Transport running on all our machines including some LCIIs running OS 7.1. Initial installation takes some time. First you have to install OT 1.1.1 then upgrade to OT 1.1.2. I'm not aware of any shortcut. You should also update AppleShare to at least 3.7.2. To save time and effort we get everything runnning right on one machine and then copy the contents of the entire hard disk to the other machines. It is well worth the effort.
